Our Favourite Fall Campfire Recipes

The leaves are changing colours, the sweaters are out of storage, and the season of all things pumpkin spice is finally upon us! For those who aren’t ready to put the campers away just yet, fall just means a whole new set of camping adventures waiting to be discovered – with campfires being a must! To get you a little more excited for the end of summer and provide some inspiration, O’Connor RV is here with our favourite fall campfire recipes. Full of tasty eats and a few sweet treats, read on for our current faves!

Easy Breakfast Bake

There’s nothing quite like waking up in the wilderness and getting things cracking (pun intended) with a hearty campfire breakfast. Simply crack your eggs in a large resealable plastic bag. Then, add milk and season with salt and pepper. Seal and squish all together until mixed. Open and dump in the hash browns, ham, and cheese. Seal again and squish it all together to blend. Then, spray the inside of some aluminum foil bags with nonstick butter-flavoured cooking spray. Divide the mixture among the foil bags and fold tightly to seal. Place foil pouches over the campfire, or you can also put them on your grill. Cook until eggs are cooked and hash browns tender and crispy, about 10 minutes. Garnish with chives and serve. The best part? Cleanup is a breeze with no dirty dishes!

Walking Tacos

Walking Tacos are a fan-favourite among campers – especially the little ones. If you’re camping with the family, this is a quick and easy recipe that requires minimal cleanup. Start by browning ground meat in a cast iron skillet and mix in taco seasoning over the campfire fire pit or your grill. Before opening each bag of corn chips, gently squish the bag to break them up into smaller pieces. Set up a small station for condiments and toppings. Carefully open the bag and let your campers spoon in the taco meat and their chosen ingredients. Dinner is served! 

Creamy Potato Soup

Nothing says fall like a warm, hearty bowl of soup for dinner. This soup can use any ingredients you like. We recommend adding kale, sausage, beans, onions, and tomatoes, but your preferred ingredients would work just as well. Simply toss your potatoes and ingredients into a Dutch Oven with four cups of broth. Bring it to a gentle boil and let it simmer for about 45 minutes or until the potatoes are soft. Slowly stir in two cups of half-and-half and your favourite seasonings and let it simmer for another 15 minutes before serving. Don’t have bowls? Pour into disposable cups for easy clean-up.  

Pumpkin Spice French Toast

Who doesn’t love a little pumpkin spice in the fall? The process for making Pumpkin French Toast is very similar to making standard French Toast with a few added ingredients. Take slices of your preferred choice of bread – we love a good Brioche! Next, you will want to make the batter. Pro tip: You can make this up to two days ahead of time at home and transport it with you in a cooler. This will speed up breakfast and cut down on individual ingredients that need to be transported. Thoroughly whisk your eggs and add in milk, pumpkin spice, sugar, and salt. Once fully blended, add in the secret ingredient: Pumpkin puree, which surprisingly soaks into bread quite nicely. Dip your bread in the batter and add to your skillet or grill. Add some butter and maple syrup, and you have the perfect fall sweet treat breakfast!
